I have previously blogged about my weekly sourdough ritual and while this still happens every Monday, sometimes, while I do need to feed my mother, I don’t need to make bread. So if I still have plenty of bread, what do I do with the discard, the portion I remove that I usually make bread with? I make sourdough pancakes.
This is so easy, and you are basically getting pancakes for free from something that might otherwise be thrown out. Here is what I do:
- Using your scales, pour half (in my case 500 grams) of the mother into a bowl. Set this aside, this is the discard.
- Feed the rest of your mother as usual. Once again, in my case, I mix 250 grams of water with 250 grams of flour. Feed the remaining 500 grams of the mother with this 500-gram mix of flour and water, cover, and set aside.
- Get your frying pan hot and add little oil. This is just the same as making any other pancakes.
- Using a 1/3 cup measuring cup, scoop some of the discard into the hot, oiled pan and cook until you see bubbles and the edges are starting to firm up and brown a little. Flip the pancake and cook on the other side.
- Once cooked, remove the pancake and place it on a plate with a paper towel on it to soak up any excess oil.
- Repeat till all the discard is gone. You may need to add a little more oil between pancakes.
This is wonderful served with maple syrup, yoguhrt, sugar, and lemon juice, or some cream and fruit. I kept it simple today; just a bit of syrup.

I was expecting to see granddaddy’s cakes. yours are very thick. his were incredibly thin as paper. I loved his cakes and made my own like that, but I prefer the crunch of waffles. I live in a tiny cabin wherein the only bread I can make now is via my waffle iron. works great. I just create a sourdough batter rather than dough. if I ever have a bigger place and a real oven again, I will reclaim my title as world’s best bread baker.

If you wanted thinner pancakes, you would just have to add water, or milk, to this the mix. I would call them crepes, but they would be delicious, whatever you called them.
